  • 2 huge tomatoes, , cut into 1-inch pieces 
  • 1 red chime pepper, , cut into 1-inch pieces 
  • 1 long English cucumber (or 2 medium nursery cucumbers), , quartered longwise and cleaved into 1/2-inch pieces 
  • 1 medium red onion, , meagerly cut 
  • 1/2 cup dark pitted olives, , divided the long way 
  • 1/2 cup chickpeas 
  • 1/2 cup Greek feta cheddar, , cubed 
GREEK SALAD DRESSING
  • 1 tsp salt 
  • 1/2 tsp dark pepper 
  • 1/4 cup additional virgin olive oil 
  • 2 Tbsp red wine vinegar 
  • 1/4 cup crisp parsley, , cleaved 
  • 1 tsp oregano

Instructions:

  1. Spot the tomatoes, ringer pepper, cucumber, onion, olives and chickpeas in a serving of mixed greens bowl and hurl tenderly to join. 
  2. Join the salt, dark pepper, olive oil, vinegar, oregano, and parsley in a little bowl, and blend. Pour the Greek dressing over the serving of mixed greens, include the cubed feta cheddar and hurl tenderly to join.
