Ingredients:
  • 3 medium to enormous beets stripped and trimmed* 
  • 1 valencia orange with pizzazz 
  • 1 lime with pizzazz 
  • 2 tablespoons olive oil 
  • salt to taste 
  • 1/2 cup chives minced

Instructions:
  1. Shred beets and add to bowl. Include pizzazz and juice from whole orange. Include get-up-and-go and squeeze from lime to taste (this sum is emotional). 
  2. Add olive oil and hurl to join. Add salt to taste and hurl to consolidate. 
  3. Include chives just before serving.
