Ingredients:

  • 2 hard bubbled eggs slashed 
  • 2 hard bubbled egg whites slashed 
  • 2 little avocados hollowed and stripped 
  • 1 tablespoon plain Greek yogurt 
  • 1 tablespoon crisp lemon juice 
  • 2 tablespoons slashed green onion 
  • 1/4 teaspoon Dijon mustard 
  • Salt and naturally ground dark pepper to taste

Instructions:

  1. In a medium bowl, join the hard bubbled eggs and egg whites, avocado, Greek yogurt, lemon juice, green onion, and mustard. Crush with a fork. Season with salt and pepper, to taste. 
  2. Serving recommendations: Spread between two cuts of bread for an Avocado Egg Salad Sandwich. Eat with wafers, cut up veggies, on toast, or in a wrap. This serving of mixed greens is best eaten the day it's made.
